Sustainability
Our Initiatives
Your Sodexo Campus Dining Team is dedicated to sustainability. We know we can all work together to make a positive impact right here at Western State Colorado University. In addition to the many initiatives we take on as a company, we have implemented the follwing programs specific to Western State Colorado University.
Recycling
We recycle all plastic, aluminum, glass, cardboard, tin, office paper, and fryer oil from our Rare Air Café, Mad Jack's, and all catering functions on campus.
Apex
Apex Diswashing systems combines technology and products desinged to save water and energy, minimize the impact of products on the environment, and has a built-in method of measuring reults. In addition, the Apex system further supports Dining Service's sustainability inititaives with non-caustic cehmnisty and 95% less packaging than current methods.
Local Suppliers
We work hard to get as many ingredients as possible from local supplies. Our professionaly trained chefs write our menus to take advantage of the fresh fruits and vegetables that are naturally in season. In addition, our culinary team is commited to purchasing and serving produce grown in our Pinnacles Greenhouse campus garden.
Pulper system
We have been successful in reducing our landfill input by using a Pulper system in place of trash cans and a garbage disposal at our post consumer collection site in Rare Air Café. Additionally, we supply all of our post production kitchen scraps and produce to two local pig farms. Approximately 25 gallons per day is being diverted from our landfill waste stream.
